By covering the bowl of the glass with your hands, it will be easy to admire the colour and appreciate the bouquet without warming up the wine.

the bowl of the glass は、the glass bowl でも良いのではないかと思ったのですが、
ワインですからやっぱりワイングラスに入っていそう。
ってことはbowl には（ワイングラスなどの）丸くなった部分、という意味があるのでしょうか？
どなたか、ご存知の方、ご教授お願い致します。

そうです。ロングマンの説明では
the part of an object such as spoon, pipe, toilet etc. that is shaped like a bowl
とあります。

元の例文は By not covering... と not が入っていて確かに変ですね。ちょっと想像したのですが，元々は By not warming... but covering... と without 以下が前に来ていたのかも知れませんね；後に持って行って前を消去したときに not だけ消去しそこなったような印象を受けました。その手のミスは私もよくしますから。
